Yes. Do not eat elderberries raw, and do not let the stems, leaves or unripe green berries into anything you are making.

The National Center for Complementary and Integrative Health states it directly: raw or unripe elderberries and other parts of the elder tree, such as the leaves and stem, contain poisonous cyanide-producing substances that can cause nausea, vomiting, and severe diarrhea; cooking eliminates this toxin. It adds that large quantities of the toxin may cause serious illness.

Penn State Extension puts the kitchen rule in four words: elderberries must not be consumed raw.

What Is Actually in the Plant

Elder contains cyanogenic glycosides, sambunigrin among them. On their own they are inert. The problem is what happens during digestion, when enzymes break them down and release hydrogen cyanide.

University of Minnesota Extension describes the mechanism plainly: raw elderberries, including the stems, leaves, seeds and flowers, contain naturally occurring compounds that can release cyanide during digestion.

This is not exotic chemistry. The same class of compound sits in apple seeds, cherry pits and raw cassava. What differs from plant to plant is how much, and which parts carry it.

Which Parts Carry the Most

A study of cyanogenic content across American elderberry tissues, published on PubMed Central, ranked them. Levels rose in the order whole ripe berries, whole red berries, juice, seeds, skin, pulp, whole green berries, stem, with the highest average amounts recorded in the stems and in whole green berries.

Two things fall out of that, and both matter in a kitchen. Stems are the worst part, not the fruit, and they are exactly the part that is tedious to remove and therefore the part people leave in. Unripe green berries are next, and a cluster ripens unevenly, so a rushed harvest brings green fruit along with the purple.

That same study found concentrations across the tissues were generally low, at a level the authors said poses no threat to consumers of fresh and processed elderberry products. Worth saying honestly, because it explains why one berry off a bush does not send anyone to hospital. It is not a reason to skip cooking. It is the reason the rule is about handfuls, clusters, stems and pitchers of juice rather than a single accidental berry.

What Happens If Someone Eats Them Raw

Nausea, vomiting and severe diarrhea, per NCCIH, and severe enough to need medical care when the amount is large.

The pattern that causes real trouble is volume, not nibbling: pressing whole clusters with the stems still attached, eating handfuls off a bush, or drinking uncooked juice.

Cooking Is the Step That Makes Them Safe

Heat breaks these compounds down. NCCIH says cooking eliminates the toxin. University of Minnesota Extension gives a working number for the kitchen: boil the elderberries for at least ten minutes, and notes that cooking elderberries significantly reduces the risk, making properly prepared jams, syrups and other cooked products safe to enjoy.

The measured effect is large. The PubMed Central paper cites work showing higher processing temperatures decreased cyanogenic glycoside levels by 44 percent in elderberry juice and 80 percent in tea, with larger reductions still in liqueur and spread.

Dried Berries Still Get Cooked

This is the one that catches people, because a dried berry looks processed and finished. It is not. University of Minnesota Extension is explicit that dehydrated berries should still be heat-treated before consumption to destroy toxins. Drying removes water. It does not do what heat does.

Ripe, Unripe, and the Red Ones

Ripe elderberries are deep purple, almost black, and soft. Penn State Extension says to process only the deep purple fully-ripe berries, and warns in the same breath never to eat the poisonous red berries from ornamental Sambucus racemosa cultivars.

Red elder is a different plant with a different answer. If the berries are red at maturity, they are not what this page is about and they are not going in a pot.

University of Minnesota Extension’s prep list is short and worth following exactly: remove all stems, leaves and unripe berries before processing, and discard seeds whenever possible, since they carry higher concentrations.

Before You Cook: Sorting

For fresh clusters, the order that works:

  1. Freeze the whole clusters solid. Frozen berries come off the stems far more easily than fresh ones.
  2. Rake the berries off with a fork, or shake them loose in a bag.
  3. Float the lot in a bowl of cold water. Stem fragments, leaves and debris rise. Ripe berries sink.
  4. Skim the top, drain, and pick out anything green or red by hand.
  5. Then cook.

Foraging: Identification Comes First

Everything above assumes you have correctly identified elder, and that assumption does more work than any of the cooking rules. Elder has lookalikes, and some of the plants it gets confused with in the field are far more dangerous than raw elderberries.
