The Short Answer

There is no published aging window for homemade eggnog. Not from the USDA, not from the FDA, not from FoodSafety.gov, and not from any extension service I could find. What Aging Is Supposed to Do

The aging tradition is old and the flavor claim behind it is real enough. Time in the cold does three things to a spirited dairy batch.

The alcohol stops reading as heat. A fresh batch tastes like rum sitting on top of cream. A rested one tastes like a single drink, and the burn at the back of the throat softens into warmth.

The spice spreads. Nutmeg and whatever else you added migrate through the dairy instead of sitting where you sprinkled them.

The texture thickens and the color deepens. Long-held batches go from pale yellow toward caramel, and they pour heavier. That visual change is most of why people who have tried aged nog talk about it the way they do.

None of that is in dispute. The question is what it costs to get there.

The University of Minnesota Extension states that homemade eggnog can be made safely from a cooked egg and milk mixture, and that to make a raw-egg recipe safe you heat the eggs in liquid from the recipe over low heat, stirring constantly, until the mixture reaches 160 degrees Fahrenheit.

What none of them offer is a sentence beginning “aged eggnog may be held for.”

The Alcohol Argument

Every long-aging recipe rests on the same premise: the spirits preserve the batch, so the ordinary rules do not apply.

Utah State University Extension addresses that premise head on. Adding alcohol will inhibit bacterial growth, but it cannot be relied upon to kill bacteria, and once alcohol is diluted it no longer effectively kills bacteria. Their conclusion is that you still need pasteurized eggs.

Inhibit and kill are doing a lot of work in that sentence. Slowing growth is not the same as sterilizing a batch, and two cups of rum spread through five cups of dairy is a heavily diluted dose.

The Experiment Everyone Cites

The usual counterargument points to a demonstration run at Rockefeller University by microbiologist Vincent Fischetti, carried out at the request of a radio program, which found few bacteria surviving in a heavily spirited nog. It is a genuine piece of work and the lab is open about it.

It is also a single lab demonstration, not a food safety guideline, and its own authors reported that when they deliberately spiked a batch with Salmonella the 24-hour result was inconclusive. A curiosity-driven experiment is not the same thing as a validated process with a temperature, a time, and a margin built in, which is what the 160 F guidance is.

Cite it as the origin of the tradition. Do not cite it as a clearance.

Why This Page Has No Aging Schedule

Because printing one would mean inventing it.

The honest position is that the aging tradition sits outside published food safety guidance rather than against it. Nobody has tested a home aging protocol and issued a number. In the absence of that number, the responsible thing is to hand you the guidance that does exist and let you decide, rather than to dress up a folk practice in the language of a rule.

Getting Aged Flavor Inside the Rules

  4. Lean harder on whole spice. Freshly grated nutmeg, a split vanilla bean in the base, a cinnamon stick during the cook. Time is not the only way to get complexity into a drink.
  5. Skip the whipped whites for a denser pour. The thick, custardy texture people associate with aged nog is partly just the absence of foam.

Storage Conditions Matter Either Way
