Eight measured drinks cover cranberry, cider, mint, pomegranate, pear, lime, orange and warm spice. Choose by portion size and component preparation time, not by a generic six-ounce punch estimate.
Before Mixing
Use pasteurized or otherwise safety-treated juices, correctly identified food-grown herbs, and commercial mixers specifically labeled alcohol-free for your needs. Ginger beer is not automatically alcohol-free because of its name. Kombucha and ordinary alcoholic bitters are not substitutions in an alcohol-free collection. Botanical spirit substitutes also require label checks. No homemade fermentation is instructed here.
Wash hands, equipment and produce. All cups and spoons below are US measures except the explicitly metric mojito. A fluid ounce measures liquid volume; a gram or ounce of ingredient weight is different. Use potable water and food-contact glassware. For acidic lime drinks, choose glass or an intact food-safe lined mug rather than exposed copper.
1. Cranberry Mocktail
Eight portions, 8 fluid ounces each before ice; optional syrup increases each to 8 1/4 ounces. About 10 minutes with cold ingredients. The original eight-cup batch did not fit four 16-ounce glasses with fruit and ice.
Ingredients
- 4 cups unsweetened cranberry juice
- 2 cups orange juice
- 2 cups club soda, kept separate and cold
- Up to 4 tablespoons prepared cold plain syrup, optional
- 1 washed orange, divided into eight thin slices
- 8 washed mint leaves, optional
- Ice for eight 12-ounce glasses
Method
Mix the two juices and chosen syrup in a chilled pitcher. Divide into eight equal portions of 6 to 6 1/4 fluid ounces. Add ice in each glass, then 2 fluid ounces club soda. Stir gently and add one orange slice and optional mint leaf. Serve immediately. For a still punch, omit soda: each of eight portions is 6 to 6 1/4 ounces; it does not retain the sparkling yield.
2. Apple Cider Mocktail
One drink, 9 fluid ounces plus 1/24 fluid ounce vinegar, with up to 1/6 fluid ounce maple syrup; use a 14-to-16-ounce glass. About 5 minutes.
Ingredients
- 3 fluid ounces nonalcoholic pasteurized apple cider
- 1 fluid ounce orange juice
- 1 fluid ounce lemon juice
- 1/4 teaspoon culinary apple cider vinegar
- 1/2 to 1 teaspoon maple syrup, optional
- 1/2 cup (4 fluid ounces) cold labeled alcohol-free ginger beer
- Ice and 1 washed apple slice, optional
- For an optional rim: 1 teaspoon brown sugar, 1/8 teaspoon cinnamon and 1 lemon wedge
Method
Mix the rim sugar and cinnamon on a clean plate; lightly moisten the outer rim with lemon and dip. Discard used coating. Shake the cider, juices, vinegar and chosen syrup with ice for 10 to 15 seconds. Strain into a 14-to-16-ounce glass with fresh ice, add ginger beer and stir gently. Add the apple slice. Keep a cinnamon stick on the table. Sparkling water may replace ginger beer at the same four-ounce volume; it changes sweetness. The former kombucha option is excluded from the alcohol-free promise.
3. Virgin Mojito
Six equal portions from 1,150 mL of starting liquids plus dissolved sugar, roughly 190 to 200 mL per portion before ice. About 10 minutes. Lime count is not a yield measure.
Ingredients
- 20 g fresh mint, stems removed
- 3 tablespoons fine granulated sugar
- 150 mL measured lime juice
- 1,000 mL (1 litre) cold soda water
- Ice for six 300-to-350-mL glasses
- 6 washed lime wedges, optional
Method
Rub the mint gently with the sugar in a sturdy food-contact pitcher using a muddler or spoon. Add the lime juice and stir until the sugar dissolves. Do not grind the leaves to a paste. Add the cold soda slowly, stir once, measure finished liquid recovery and divide into six equal glasses over ice. Add optional lime. The sugar changes volume; no exact pint conversion or count of eight limes is promised. Use all stated ingredients in a double batch, including twice the soda, adding the soda only at service.
4. Sparkling Pomegranate Mocktail
One drink, 4 2/3 fluid ounces before ice; about 5 minutes.
Ingredients
- 2 fluid ounces pomegranate juice
- 1/2 fluid ounce lime juice
- 1 teaspoon culinary apple cider vinegar
- 2 fluid ounces cold labeled alcohol-free ginger beer
- Ice for a 10-ounce glass
- Optional: 1 teaspoon flaky salt on a rimming plate, 1 lime wedge/wheel, 1 teaspoon washed pomegranate arils
Method
For a rim, moisten the outer edge with the lime wedge and dip lightly into salt; discard used salt. Stir the juices and vinegar, pour over ice, then add ginger beer gently. Add optional arils and lime. For eight, mix 16 fluid ounces pomegranate juice, 4 fluid ounces lime juice and 8 teaspoons vinegar. This is 21 1/3 ounces base: pour 2 2/3 ounces per glass, then 2 ounces ginger beer. The vinegar contributes volume and must not disappear from batch-pour arithmetic.
5. Ginger Pear Mocktail
One drink, 5 1/4 fluid ounces before shaking dilution; about 5 minutes with cold syrup, 40 to 50 minutes including the component.
Ingredients
- 1 fluid ounce lemon juice
- 1/4 fluid ounce (1 1/2 teaspoons) cold rosemary syrup, component below
- 2 fluid ounces pasteurized pear juice
- 2 fluid ounces cold labeled alcohol-free ginger beer
- Ice for shaking and a 10-ounce serving glass
- 1 washed pear slice, optional
Method
Shake the lemon, syrup and pear juice with ice for 10 seconds. Strain into the serving glass with fresh ice, add measured ginger beer and stir gently. Add pear, keeping whole rosemary on the table. Plain syrup at the same quarter-ounce volume is a milder option. For eight, mix 8 ounces lemon, 2 ounces rosemary syrup and 16 ounces pear juice: 26 ounces base, poured as 3 1/4 ounces each, plus 16 ounces ginger beer supplied separately.
6. Virgin Moscow Mule
One drink, 5 1/2 fluid ounces before ice; about 5 minutes.
Ingredients
- 1 tablespoon (1/2 fluid ounce) lime juice
- 4 fluid ounces labeled alcohol-free ginger beer
- 1 fluid ounce club soda
- Ice for a 10-ounce glass or intact food-safe lined mug
- 1 lime wedge, optional
- 1/4 teaspoon specifically labeled alcohol-free Italian-style red bitters, optional
Method
Put ice in the glass, add lime and optional bitters, then gently pour in ginger beer and soda. Stir once and add lime. Optional bitters add 1/24 fluid ounce. The mixer is measured rather than an unspecified top-up. Plain club soda can replace ginger beer at the same volume for a less sweet, less gingery drink.
7. Shirley Temple
One drink, 8 1/2 fluid ounces before ice; about 5 minutes.
Ingredients
- 1/2 cup orange juice
- 1/2 cup lemon-lime soda
- 1 tablespoon grenadine
- 1 maraschino cherry
- Ice if desired; use a 12-ounce glass
Method
Pour juice and soda into the glass, add grenadine, and stir gently before serving with the cherry. Ginger ale may replace the soda in equal volume. Follow the cherry package for stems or pits; remove them before serving to young children. This is compared with Jocelyn’s accessible Allrecipes recipe.
8. Spiced Orange Mocktail
Four drinks, 9 1/4 fluid ounces each before shaking dilution and ice; about 15 minutes active, 40 to 50 minutes from scratch. Only four fluid ounces of recovered spice syrup enter the drink batch; reserve extra.
Ingredients
- 1/2 cup water for the spice syrup
- 1/4 cup maple syrup for the spice syrup
- 4 small washed culinary thyme sprigs, about 10 cm long
- 1/2 teaspoon ground cinnamon
- 2 tablespoons grated fresh ginger
- 1 fluid ounce measured lemon juice
- 2 cups orange juice
- 2 cups cold ginger ale
- Ice for shaking and four 14-to-16-ounce glasses
- 4 washed orange slices, optional
Method
Heat water, maple syrup, thyme and cinnamon to a gentle simmer in a small saucepan, then maintain it gently for 3 minutes. Strain into a small heat-safe container and cool promptly over an ice-water bath, then refrigerate until cold, allowing roughly 20 to 30 minutes or longer as needed. Measure recovery; if below four fluid ounces, top up with potable water to four ounces. Reserve any amount above four ounces.
Mix 4 fluid ounces cold spice syrup with the ginger and lemon. Divide that still mixture into four equal shaker portions; shake each with ice for 10 seconds and fine-strain into a glass with fresh ice. Add 4 fluid ounces orange juice and 4 fluid ounces ginger ale to each, stirring gently. Optional orange is the garnish; whole thyme and cinnamon sticks belong on the table. Grated ginger retention and shaking dilution make actual recovery vary. Do not seal hot syrup or carbonated mixer in a shaker.
Plain and Rosemary Syrup Components
For a small plain syrup, heat 1/2 cup sugar with 1/2 cup water, stirring until dissolved, about 3 to 5 minutes. Take off heat. For rosemary syrup, add one washed 10-cm culinary rosemary sprig to that hot dissolved syrup, cover off heat for 10 minutes, then strain. The rosemary loading is a house starting point, not a validated botanical dose. Do not boil until a fixed final volume.
Measure the actual recovered syrup; expect roughly 3/4 cup plain syrup, with herb and evaporation losses in the rosemary version. Cool promptly in a small heat-safe container over an ice-water bath and refrigerate until cold, allowing about 20 to 30 minutes or more. Plain syrup takes about 25 to 35 minutes, rosemary about 35 to 45 minutes, before drink assembly. Use only the amount each drink calls for. Commercial prepared syrups are alternatives; follow their labels.
Scaling and Storage
Multiply every measured ingredient by the required serving factor, including carbonated mixers. Keep bubbles separate until service; delaying them does not mean omitting them from scaling. The cranberry recipe is now eight portions, so ten portions use a factor of 1.25, not 2.5: 5 cups cranberry, 2 1/2 cups orange, 2 1/2 cups soda and up to 5 tablespoons syrup. That is 10 to 10 5/16 cups total before ice. Use a vessel over three quarts for mixing headroom and put ice in the glasses.
Make house juices/bases and syrups on the day of serving, or freeze the still components promptly in clean portions for refrigerator thawing. Do not promise weeks of storage for opened juices or syrups without the actual package or a validated method. The same-day policy is conservative house handling, not measured shelf life. Add mint and cut fruit at service. Keep perishable components at 40 F (4 C) or below. Use clean small cold pitchers and garnish dishes; replace them instead of topping up warm remnants.
Discard after more than two cumulative hours without cold holding, or one hour above 90 F (32 C). Date prepared containers and follow any shorter package instructions. Neither smell nor fizz certifies safety.
Garnish, Ice and Flavor Adjustments
Use one washed mint leaf or a citrus/fruit slice from the drink’s ingredients where specified. Keep woody sprigs and whole spices on the table. For optional frozen fruit or juice ice, wash edible fruit, place in clean trays with the drink’s juice, cover and freeze solid, usually 4 to 6 hours or overnight; freezing adds to the clock and does not sanitize fruit. Thawing fruit or decorative cubes alone do not demonstrate cold holding; check liquid temperature. Do not use pitcher-chilling ice for drinking ice.
For a sweeter single glass, start with 1 teaspoon cold prepared plain syrup, increasing liquid by 1/6 ounce. For more acidity use 1 teaspoon of the recipe’s citrus juice, also adding 1/6 ounce. Stir gently and assess flavor only in a freshly prepared properly handled drink. These are taste choices, not microbial control limits. Honey is not needed here; raw honey additions are not a preservation method.
Common Questions
Can I replace the mixer with a nonalcoholic spirit?
The product name alone does not prove zero alcohol or equal flavor. For the stated alcohol-free drinks, use the mixers and label checks above. A branded spirit substitute needs its own complete serving directions; no one-for-one substitution is promised here.
How do I keep a pitcher cold without diluting it?
Chill the liquids first and hold the pitcher in ice, measuring that it remains at or below 40 F. Add clean drinking ice only to the individual glasses. Frozen fruit looks decorative but does not establish a safe liquid temperature.
Is ginger beer always less sweet than ginger ale?
No. Sweetness, ginger strength, fermentation and alcohol vary by product. Compare labels and taste in a freshly prepared drink. Use labeled commercial alcohol-free mixers; this article adds no fermented beverage process.
