What You Need

2-3 medium beets (about 1 pound), peeled and cut into 1-inch cubes
1 tablespoon fine sea salt (non-iodized)
3-4 cups filtered or unchlorinated water, enough to fill a quart jar
Optional: 1 clove garlic, 1 teaspoon fresh grated ginger, or a strip of orange peel
Step 1

Scrub and peel the beets. Cut into roughly 1-inch cubes. Do not grate them. Grated beet ferments too quickly and produces alcohol instead of lactic acid.

Step 2

Dissolve 1 tablespoon of non-iodized sea salt in 1 cup of filtered water to make a brine. Pour over the beets.
