Homemade Ginger Beer Recipe (Naturally Fermented)

What You Need

For the ginger bug: 2 tablespoons grated fresh ginger
For the ginger bug: 2 tablespoons granulated sugar
For the ginger bug: 2 cups filtered water (non-chlorinated)
For the ginger bug: additional ginger and sugar for daily feeding
For the ginger beer: 6 inches fresh ginger root, roughly chopped
For the ginger beer: 1 cup granulated sugar
Step 1

Start the ginger bug (5 days before brewing): Add 2 tablespoons grated ginger, 2 tablespoons sugar, and 2 cups non-chlorinated water to a quart jar. Stir, cover loosely.

Step 2

The bug is ready when it fizzes actively, smells yeasty and gingery, and you see consistent bubbles forming within minutes of stirring.
