What You Need

2 cups fresh fruit (strawberries, raspberries, peaches, blueberries, or rhubarb)
1 cup raw cane sugar or white granulated sugar
1 cup raw apple cider vinegar with the mother
Sparkling water for serving
Ice
Glass jar with lid (quart size)
Step 1

Wash and prep the fruit. Slice strawberries and peaches, crush raspberries and blueberries lightly with a fork, chop rhubarb into half-inch pieces.

Step 2

Cover and refrigerate for 24 to 48 hours, stirring once or twice daily. The sugar draws out the fruit juice through osmosis, creating a thick, deeply colored syrup.
